  • To make the sauce, combine all of the sauce ingredients in a small bowl. Refrigerate up to 1 day until ready to use.
  • To make the sandwiches, begin by heating a grill to medium heat and brushing the grate with olive oil.
  • Grill the sausages for about 12 minutes, turning as needed until cooked through.
  • Slice the sausages into 2-inch pieces.
  • Layer the sausage on the pita breads and top them with the lettuce, tomato, onion, and a spoonful of the yogurt-cucumber sauce.
  • Fold the pitas over the sausage slices and serve immediately, serving the remaining sauce alongside.

- YOGURT-CUCUMBER SAUCE:
-1/2 seedless cucumber - peeled and halved lengthwise
-1 clove garlic, minced
-1/2 teaspoon kosher salt
-1 cup plain whole-milk yogurt
-2 tablespoons extra-virgin olive oil
-1 tablespoon finely chopped dill
- freshly ground pepper
- GYROS:
-1 package Premio fresh or frozen sweet Italian sausages
-4 pocketless pita breads or nan, about 8 inches in diameter
- romaine lettuce leaves
- tomato slices
- red onion slices
