APRICOT CRUMB PIE - Recipe

Directions
Bring apricots, 1 qt. water and salt to a boil and allow to boil for 30 minutes. Thicken with cornstarch and cold water made into a paste. Add sugar. Cook until clear and sugar is dissolved. Cool this. Pour filling into 9" unbaked pie shell. Sprinkle with crumbs. Bake at 425° for 15 min. Reduce heat to 375° and bake for 35 - 40 min.

Crumbs:

1 C. Flour

1/2 C. Sugar

1/2 tsp. Salt

1/3 C. Butter

Mix all ingredients together until crumbly. Sprinkle over pie before baking.

-1 quart water
-1/2 teaspoon Salt
-1/4 cup cornstarch
-1/4 cup cold water
-1/2 cup granulated sugar
