| Directions |
- Get out frying pan and coat with a little oil.
- Heat it up and add onions.
- Cook onions until soft.
- Remove casing from the sausage and brown.
- Remove excess fat.
- Squeeze water out of spinach and add to the pan.
- Saute for a few minutes, then allow mixture cool a little in fridge.
- While waiting, get a bowl and add eggs, ricotta, parmesan cheese and mozzarella cheese, salt and pepper to taste.
- Mix well until everything melds together.
- When sausage mixture is cool, add it to the cheese and mix well.
- Then pour into frozen pie crusts.
- Can be with a top crust or a single.
- Bake for 1 hour at 375 degree F. pre heated oven.
- Watch for overbrowning of the crust.
- Serve hot or cold.
