Directions
Prepare bacon. Beat eggs, sour cream, onion, salt and pepper. Add crumbled bacon and cheese. Pour into prepared crust. Bake in 350° oven for 30 minutes or until knife inserted in center comes out clean. Let rest 5 minutes before serving. For vegetarian quiche, substitute 1 cup chopped broccoli or spinach for crumbled bacon. Soda Cracker Crust - 1-1/2 cup soda cracker crumbs, 1/4 teaspoon salt, 8 oz. butter or margarine, melted. Combine crackers, salt and butter. Reserve 1/2 cup of crumb mixture for topping if desired. Press remainder into quiche pan making sure to push mixture up sides at least 1-1/2 inch. Pour in quiche mixture and bake as above.
