The hardest part of making this traditional Jamaican flat bread might be finding the cassava. Look in specialty or ethnic groceries.
Bammy Bread Recipe (+)
Directions
Peel cassava and grate onto a piece of cheesecloth or other lightweight fabric. Twist fabric around grated cassava to wring out as much moisture as possible.
Add a pinch of salt, mix in and divide the cassava into 4 portions. Shape each into a thick pancake about 4" across.
Heat oil over medium heat in a skillet or griddle. Fry bammies 8 to 10 minutes each side.
Put coconut milk in a wide shallow bowl and soak fried bammies 5 to 10 minutes. Return to skillet or griddle and fry until golden brown. Serve hot.

"This was a well-enjoyed side dish to go with Kallaloo. I would suggest frying the bammy cakes in a good/deep amount of oil first and then draining most of that oil before putting the coconut-milk covered cakes back into the pan."
