Beets with Raisins - Recipe

Sweet and tangy, this chutney-like dish is an excellent accompaniment for poultry or pork.

Beets with Raisins Recipe
Directions
  • Drain liquid from the beets to equal 3/4 cup, add water if necessary.
  • Set beets aside.
  • Place beet juice in a medium saucepan.
  • Whisk in the cornstarch until all lumps are removed.
  • Add the remaining ingredients to the saucepan.
  • Heat over medium heat and stir until thickened, approximately 10 minutes.
  • Reduce heat to low and simmer gently for 10 more minutes.
  • Add the beets and heat through.
  • Serve warm.
  • Goes great with pork or chicken.

Ingredients
-16 ounces (1 can) sliced or diced beets
-3/4 cup beet juice
-1 tablespoon cornstarch
-1/4 cup orange juice
-1 tablespoon lemon rind
-1/2 cup cane or regular white sugar
-1/4 cup cider vinegar
-1/2 cup golden raisins
-1/2 cup regular raisins
-1 pinch salt
