Bring the first seven ingredients to a boil for 5 mins and then let cool for 2 hours or longer. (must be cooled) Put the raisin mixture in a large mixing bowl. When cool add eggs, baking soda and flour. Bake in two greased and floured loaf pans (or use cooking spray with flour) at 350° for 1 hour or when knife inserted comes out clean.
Note: You can chop apple and boil with raisin mixture. Also, you may add one small package of chopped nuts at the end before putting into pans.
