Topping: Heat oven to 375°. In small bowl combine sugar & cinnamon. Lightly grease 2 loaf pans. Sprinkle 1 1/2 tsp. topping into the bottom of each pan, set remaining topping & pans aside. Batter: In medium bowl, stir together flour, baking powder, salt & baking soda, stir in nuts & set aside. In large bowl cream butter and brown sugar, add eggs and beat until smooth. Stir in pineapple & vanilla. Add flour - nut mixture and stir to combine. Spoon batter into pans, smooth tops, then sprinkle with remaining topping. Bake for 50 to 60 minutes |
