Spicy Roasted Tomato Salsa Recipe
Directions
  • Heat oven to 400°.
  • Cut tomatoes in half.
  • Set them cutside down on a foil-lined baking sheet and cook until skin splits and tomatoes soften. Approximately 10 minutes.
  • Cool slightly on sheet, then peel off the skins and discard.
  • Place tomatoes and remaining ingredients in a food processor.
  • Process until well blended.
  • Adjust seasoning to taste.
  • Store refrigerated in an air tight container.

-1 tablespoon jalapeņo peppers - finely chopped
-1 tablespoon fresh cilantro - chopped
-1 tablespoon lime juice
-1 teaspoon salt
