Lemon and Herb Potato Salad Recipe
Directions
  • Cook potatoes in salted water until just tender. You don't want to over cook them. Drain and allow to cool. Cut potatoes into cubes.
  • In a small bowl, whisk the oil, lemon juice, and lemon peel. Add to the oil, salt and pepper to taste, green pepper, onion, cilantro, and basil. Pour dressing over potatoes.
  • Let stand in refrigerator for at least an hour to allow potatoes to absorb the flavors.

    -2 1/2 pounds new red skinned potatoes, unpeeled
    -3/4 cup olive oil
    -1/4 cup fresh lemon juice
    -1 1/2 teaspoons grated lemon peel
    -1 medium sized green pepper, diced
    -1 cup red onion, diced
    -1/4 cup fresh chopped cilantro
    -1/4 cup fresh chopped basil
