 | | Directions | | Preheat oven to 450º F.
Coat a large skillet with vegetable cooking spray. Place duck breasts into prepared skillet and brown lightly, approximately 1 to 3 minutes on each side.
Coat a baking dish with vegetable cooking spray, put the duck in baking dish, and bake for 20 minutes, or until done.
Allow duck to cool before slicing thinly. Divide spring greens between 2 serving plates. Sprinkle greens with vegetables, the sliced duck, and croutons. Drizzle with dressing. Season to taste.
Serve immediately. |
