Apple Cranberry Crisp Recipe
Directions
  • Preheat oven to 350° F.  Coat baking dish with vegetable cooking spray.
  • Peel, core, and slice apples and place in a large mixing bowl.  Toss lemon, vanilla, cinnamon and nutmeg onto apples.
  • In a separate bowl, mix flour, sugars, oatmeal and cinnamon. Cut in butter until mixture becomes crumbly.  Mix dried cranberries into the topping mixture.
  • In the prepared pan, layer the sliced apples and sprinkle the topping evenly over apples.
  • Bake 45 to 50 minutes, or until top is golden brown, and apples appear tender.  Garnish with whipped topping or ice cream,  if desired.

    *Use baking apples that do not become mushy when cooked.

-8 large baking apples*, peeled, cored and sliced (about 3 pounds)
-1 tablespoon lemon juice lemon juice
-1 1/2 teaspoons vanilla vanilla
-1/2 teaspoon cinnamon - ground
-1/8 teaspoon nutmeg - ground or a few grinds of fresh nutmeg
- TOPPING
-1 cup flour - all-purpose
-2 cups oatmeal - (uncooked)
-1/2 cup brown sugar - packed
-1/2 cup sugar, granulated
-1/2 cup cranberries - dried
-1 teaspoon cinnamon
-10 tablespoons butter - unsalted (or margarine), cut into small pieces
