Breakfast Cupcakes - Recipe

A sausage and egg muffin that starts off the morning on the right foot. These individual breakfasts can be frozen and eaten later.

Directions
Preheat oven to 375. Spray 12 muffin cups with cooking spray or line them with cupcake liners.

Spoon the cooked sausage pieces into each cupcake.

In a medium bowl, whisk together eggs, milk, oil and baking powder until smooth. Gently stir in cheddar cheese and season with salt and pepper.

Ladle the egg mixture over sausage.

Bake for 15 or until egg is cooked through.

Sprinkle with Parmesan Cheese and serve warm.

-12 ounces breakfast sausage links, cooked, diced
-8 eggs
-1/4 cup milk
-2 teaspoons vegetable oil
-1/2 teaspoon baking powder
-1 cup shredded Cheddar cheese
- salt and pepper, to taste
-1/4 cup shedded Parmesan cheese
