Prepare quinoa like rice. Bring water and quinoa to a boil, reduce heat and simmer 15 to 20 minutes. Meanwhile, chop other ingredients. When quinoa is cooked, allow to cool for a few minutes (or the cheese will get gloppy and melty). Stir in other ingredients. That's it...you're done!

You can also replace the sun-dried tomatoes and feta with fresh grape tomatoes sliced in half, dried cranberries, and pistachios or pine nuts. Or any other flavor combination you like!

-2 cups water or broth
-1 cup quinoa (high protein grain available near rice inch most grocery stores)
-1/2 cup sun-dried tomatoes, chopped
-1 cup Feta cheese, crumbled
-1/4 cup Parmesan Cheese
-1/2 cup pine nuts (optional)
-1/2 cup raw scallions or sautéed onions (optional)
-1/2 lemon, juiced
- drizzle of olive oil
