Vegetables roasted up in the oven with Italian dressing. The veggies caramelize and are super delicious.

Oven Roasted Italian Vegetables Recipe
Directions
Heat oven to 450 degrees. Generously spray 15x10x1-inch pan with cooking spray.

In a large bowl, toss vegetables with dressing. Spread vegetables in single layer in pan. Add salt and pepper.

Bake uncovered 30 minutes, stirring occasionally, until crisp-tender.

-1 1/2 cups baby-cut carrots
-1 1/2 cups fresh whole mushrooms (optional)
-2 onions, cut into 1-inch wedges
-1 red bell pepper, cut into 1-inch pieces
-1 zucchini, cut lengthwise in half, then cut crosswise
-3 cups cauliflower florets
-1/2 cup Italian dressing
- salt and pepper, to taste
