Directions
Boil eggplant and onions in 1 cup water. Drain and mash. Stir in butter, egg yolks, salt, breadcrumbs and 1/2 cup water. Pour into 9x13 pan and bake at 350° for 20 minutes. Add cheese and bake an additional 10 minutes.

-3 onions, chopped (medium)
-1 cup water
-2 tablespoons butter
-2 Egg Yolks
-1 teaspoon Salt
-1/2 cup dry breadcrumbs
-1/2 cup water
-1/2 cup grated Parmesan cheese
