| Directions | Cook rice according to package directions. Combine cottage cheese, eggs, vegetables, 1/2 Cup cheese, salt and pepper. Stir in cooked rice. Spoon into 2 qt baking dish; dot with cheese. Bake for 30 minutes at 350°. |
