Directions
Slice all vegetables, layer in microwavable dish until all vegetables used. Cover, leaving small area open for steam to escape. Microwave on high for 8 minutes. Sprinkle shredded cheese on top and microwave for another 2 minutes. No seasonings needed and it's delicious!
 
 
Ingredients
-2 Zucchini (can also use one small yellow squash and one zucchini) (small)
-2 tomatoes (medium)
-1 onion (large)
-1/2 cup Shredded Cheddar Cheese (or half Cheddar, half Monterey Jack)
