French Market Soup - Recipe

This recipe makes a full pot of soup. Have a crowd on hand. If no crowd, you'll be glad to know it freezes well!

Directions
Wash and drain beans. Soak overnight in salt and enough water to cover.

Drain and rinse beans. Add 2 quarts water, ham, bay leaves and thyme. Simmer covered for 3 hours.

Remove from heat and add celery, bell pepper, onion and tomatoes. Salt and pepper to taste. Return to stove and simmer 1 1/2-2 hours.

Add parsley and serve.

-1/4 cup Pinto Beans
-1/4 cup Lentil Beans
-1/4 cup Black Eyed Peas
-1/4 cup Garbanzo Beans
-1/4 cup Black Beans
-1/4 cup Navy Beans
-1/4 cup Baby Lima Beans
-1/4 cup Split Peas
-1 tablespoon salt
- water
-1 pound ham, diced
-2 bay leaves
-2 teaspoons thyme
-3 stalks celery, diced
-1 bell pepper, diced
-2 onions, diced
-1 quart whole tomatoes with juice
- salt and pepper, to taste
-2 tablespoons parsley
