Directions
Bring water or broth to a boil. Add quinoa to boiling liquid; reduce heat and simmer, covered, for 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork. Cool to room temperature.

Combine ingredients for dressing in small bowl and mix well. Stir into quinoa. Within 2 hours before serving, add peas, peppers, and scallions or onions to quinoa. Mix gently to combine. Serves 4.

-2 cups water or vegetable broth
-1 cup quinoa
-1 cup frozen green peas, thawed and drained
-1 cup bell peppers (yellow, red and/or orange), diced
-2 tablespoons scallions or onions, chopped
- DRESSING:
-1 teaspoon toasted sesame oil
-1 teaspoon olive oil
-2 teaspoons Soy Sauce
-1/2 teaspoon black pepper
-1/2 teaspoon Salt
