Artichoke Nibbles - Recipe

Drain marinade from 1 jar of artichoke hearts into frying pan.

Add onion, garlic and saut for 5 minutes.

Beat eggs.

Add bread crumbs, salt, pepper, oregano and hot pepper seasoning.

Stir in cheese, parsley and chopped artichoke hearts.

Bake in 9 X 11 pan at 325 for about 30 minutes. Cool.

Cut into 1 inch squares.

Can be frozen and reheated.

-2 jars each) artichoke hearts, chopped (6 ounce jars)
-1 onion, finely chopped
-1 clove garlic, chopped
-4 eggs
-1/4 cup fine bread crumbs
-2 tablespoons minced parsley
-1/4 teaspoon salt
-1/8 teaspoon pepper
-1/8 teaspoon oregano
-1/8 teaspoon hot pepper seasoning
-1/2 pound sharp cheddar cheese, shredded
