Tailgate Ham and Cheese Sandwiches - Recipe

Each bite of this sandwich provides a burst of flavor. The savory flavor of ham and bacon is combined with the creamy texture and great flavor of the cheese. All of that is topped off with the sweet taste of roasted red peppers. This is one of those sandwiches that your family will be asking for time after time.

Tailgate Ham and Cheese Sandwiches Recipe
Directions
  • Fold four 18x12" pieces of heavy foil in half to make four 9x12" pieces. Set aside.
  • Spread roll bottoms and tops evenly with barbecue sauce. Top each roll bottom with cheese, cutting to fit if necessary. Top each with ham, cutting thicker-sliced ham to fit. Top with bacon and, if you like, pepper strips.
  • Place each roll top, sauced side down, over bacon. Wrap each in a foil piece.
  • For a charcoal grill, arrange medium-hot coals around bottom edge of grill. Test for medium heat above center of grill.
  • Place foil-wrapped sandwiches on center of grill rack, not over the coals. Cover and grill for 12-15 minutes or until heated through and cheese melts, turning once halfway through grilling.
  • For a gas grill, preheat grill. Reduce heat to medium. Adjust for indirect cooking. Cover and grill as above.
  • Serve warm. If you like, serve with pickles.
  • Makes 4 sandwiches.

Ingredients
-4 kaiser or French style rolls, split
-1/4 cup bottled barbecue sauce
-8 slices Swiss, mozzarella, provolone and/or Colby and Monterey Jack cheese (1 ounce slices)
-8 - 12 ounce thinly sliced cooked ham or 1/4 - 1/2 inch thick slices cooked ham
-8 slices bacon, crisp cooked, drained and halved
-2/3 cup roasted red pepper strips
