Directions
Prepare 1 whole cooked turkey by removing all meat from the bones. Devein and remove skin, discard the innards unless you got your own thing to do with them. In a large baking pan, cut all the meat into 1-2 inch pieces. (Smaller if you like the shredded style). In a mixing bowl, mix 1 bottle of Caribbean Jerk Sauce, 1 cup honey, 1 cup brown sugar, 1 cup Mojo, and 1/4 cup Cajun Hot Seasoning Sauce (optional). Blend ingredients well as they are added but sugar does not have to be dissolved. Pour mixture over turkey, mix well using hands to turn Turkey pieces but do not squeeze or press. (Unless you have chosen the shredded style) Cover pan with aluminum foil and crimp around to seal. Let sit in refrigerator overnight. Bake in oven at 350 for 1 1/2 - 2 hours. Serve over rice or spaghetti. Feeds a whole bunch!
