Almond Sugar Cookies

Ingredients
- 3/4 cup butter - softened
- 1 cup vegetable oil
- 1 cup sugar, granulated
- 1 cup powdered sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons almond extract
- 4 1/4 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 teaspoon salt
- granulated sugar for flattening 
 
A crispy and light sugar cookie loaded with flavor. These cookies are especially requested at
Christmas. Almond extract is my favorite but you can change it by modifying the flavoring.

  • In a large bowl, cream together the butter, oil and sugars. Add in the eggs, one at a time.
    Add vanilla and almond extracts.

  • Sift together the flour, cream of tartar, baking soda and salt. Gradually mix in the dry
    ingredients until well blended.

  • Chill for at least 2 hours as batter is soft.

  • Preheat the oven to 375 degrees.

  • Roll the dough into walnut sized balls. Place the cookies 2 inches apart onto the cookie sheet.
    Flatten cookies to 1/8 inch thickness using the bottom of a glass dipped in sugar.

  • Bake for 8-10 minutes in the preheated oven, or until the edges are golden brown. Allow cookies
    to cool on baking sheet for 2 minutes before removing to a wire rack to cool completely.

  • Frost, if desired.
