Four Fruit Compote

Ingredients
- 20 ounces pineapple chunks in natural juices
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1/3 cup orange juice
- 1 tablespoon lemon juice
- 11 ounces mandarin oranges - drained
- 3 apples - favorite variety, more if desired, unpeeled and diced
- 3 bananas - sliced 
 
A great tasting fruit salad with an orange pineapple glaze. A nice Easter or Mother's Day recipe.
 
Directions
  • Drain the pineapple but reserve 3/4 cup of the juice.
  • Combine the sugar, cornstarch,
    pineapple juice, orange juice and lemon juice in a small saucepan.
  • Cook over medium heat until
    thick and bubbly and then cook and stir for one minute more.
  • Remove from the heat.
  • In a medium serving bowl, combine the pineapple, oranges, apples and
    bananas.

  • Pour the warm syrup over the top and stir to combine.
  • Cover and refrigerate until cooled
    through.
