Mexican Tortilla Casserole

Ingredients
- 2 pounds ground beef
- 1 onion, diced
- 2 teaspoons garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 10 ounces enchilada sauce
- 5 ounces evaporated milk
- 1 can green chilies, diced
- 2 cups monterey jack cheese, shredded
- 10 corn tortillas, cut into triangles 
 
Cheesy and creamy dish that will please everyone. This can be made in advance to throw into the
oven on a busy night. Spice it up with mild to hot enchilada sauce.
 
Directions
Preheat oven to 350 degrees. Lightly grease a 13x9 inch baking dish. In a large skillet, brown

ground beef and onion. Drain. Add seasonings, soups, enchilada sauce, milk and chilies. Bring to
a boil. Remove from heat and stir in cheese until melted. Place 2 cups of mixture on the bottom of
prepared baking dish. Top with tortilla pieces. Repeat layers, ending with the tortilla pieces.
Bake for 25-30 minutes or until tortillas are crisp on top. Top with green onions, black olives
and sour cream, if desired.
