Ingredients - 4 tilapia fillets, about 6 oz. - 1 cup milk, divided - 1 tablespoon butter - 1 tablespoon corn starch (substitute flour) - 3 tablespoons crumbled blue cheese - 1 cup dry white wine, water, or a mixture - salt and pepper The addition of this easy sauce turns mild-mannered tilapia into something special. Be sure to use corn starch, not flour, if dish needs to be gluten-free. Directions
- Remove 1 tablespoon milk and mix with cornstarch to a smooth paste; mix back into remaining
milk. (Adding dry cornstarch directly to the cup of milk would make it difficult to mix in.) Crumble blue cheese into milk.
In a small pan, melt butter over medium heat. Add milk mixture and whisk until mixture bubbles and is thickened, 3 to 5 minutes. Add salt and pepper to taste. Set aside.
