Ingredients
- 1 pound carrots
- 1 sweet red pepper
- 1/2 cup raisins or dried cranberries
- 1/4 cup salted roasted sunflower seeds
- 1/4 cup bottled vinaigrette dressing, or to taste
- 2 tablespoons chopped parsley 
 
Golden carrots for color, crunch and all-around goodness, enhanced with the sweetness of raisins
and the saltiness of sunflower seeds.
 
Directions
  • Peel carrots and grate coarsely, or shred in a food processor.  Dice pepper or cut
    into matchsticks and add to carrots. Stir in raisins and sunflower seeds and toss with vinaigrette.
    Sprinkle with parsley and serve.
