- 3/4 teaspoon cinnamon - 1/2 lemon - zested After just one taste, you'll find these terrific scones hard to resist, especially when prepared with a variety of optional ingredients such as, dried currants, cherries, apricots, or strawberries; chocolate chips, chopped chocolate, or white chocolate chips; or citrus zest, cinnamon, or nutmeg. Directions
Sift together flour, salt and baking powder and 2 tablespoons sugar in a large bowl.
Cut in butter with fork or pastry blender until it resembles small pebbles.
Mix in egg and 1/2 cup plus 2 tablespoons cream.
Stir in any combination of ingredients you want. I used 1/2 cup craisins and 1/2 cup white chocolate chips.
Preheat oven to 400°F.
Turn dough out onto lightly floured surface and knead lightly. Pat into a 9" circle and about 1/2" thickness. Cut into 12 wedges. Place on baking sheet (not greased).
Separate, brush tops with a little cream. Sprinkle with remaining 2 tablespoons sugar.
Bake 15 minutes or until light brown.
Serve warm.
