Salmon with Whole Wheat Angel Hair Pasta

Ingredients
- 1 pound whole wheat angel hair pasta
- 2 garlic cloves - minced
- 3 tablespoons olive oil - divided
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 lemon - zested and juiced
- 1 teaspoon crushed garlic
- 6 - 4 oz. pieces of salmon
- salt and pepper to taste for seasoning salmon
- 1/2 bag fresh spinach
- 1/4 cup basil - fresh, chopped
- 3 tablespoons capers - drained
- 2 green onions, chopped

Directions

  • Bring large pot of water to a boil, cook pasta according to package directions.

  • Place pasta in a large bowl. Add minced garlic, 2 tbsp. olive oil, salt, pepper, and 1/2 lemon
    zest from whole lemon. Toss to combine. Keep warm while cooking salmon.

  • In sauté pan, heat 1 tablespoon oil over medium/high heat; add the crushed garlic.

  • Place salmon fillets, skin side down, in oil. Cook for 5-6 minutes, until bottom of salmon is
    cooked.

  • Turn broiler on low. Drizzle 1/2 of the lemon juice over salmon; season with salt and
    pepper.

  • Place sauté pan under broiler. Broil 5-10 minutes. Broil just until salmon flakes easily and
    lightly browned on top. Remove from the oven.

  • Add the spinach and basil to the pasta and toss to mix in evenly. Place the pasta mixture on
    a large platter and spread out evenly.

  • With a spatula, remove fillets from the pan and place on top of the pasta. Garnish with green
    onions, capers and lemon zest.
