Ingredients - 1 pound beets - 1/2 cup dry white wine - 1/2 cup water - 2 tablespoons olive oil or butter - 2 cloves garlic, finely minced (use more if preferred) - 1/2 teaspoon salt - 1/2 teaspoon freshly ground black pepper - 2 tablespoons crumbled feta cheese (optional) Complex flavors in a very quick dish. Directions
- Peel beets and cut into bitesize pieces. Remember that raw beets will stain everything
they touch, so protect countertops.
Put all ingredients into a saucepan. Cover and simmer until beets are tender, 10 to 15 minutes. Older beets may take longer.
Strew feta over, if using. Serve warm, room temperature, or cold.
