Ingredients - 1 cup honey roasted peanut and cashew mix - 1 bunch fresh cilantro - remove bottom half of stems - 1/4 cup olive oil - 4 cloves garlic - 2 tablespoons soy sauce - 1/2 tablespoon brown sugar - 3 pepperoncini - seeded or fresh jalapeños - 1 lime - plus lime wedges for garnish - salt and pepper to taste - 3 pounds chicken pieces Directions
In a blender or food processor, blend the peanuts, cilantro, oil, garlic, soy sauce, brown sugar, pepperoncini and lime juice.
Blend into a smooth paste.
Add salt and pepper to taste.
Reserve 1/2 cup for serving with chicken.
Use the rest to brush on the chicken.
Place chicken pieces in a 9x13 dish.
