Ingredients - 1 pound fresh asparagus - 3 medium tomatoes, diced - 1 package goat cheese, crumbled - 1/4 cup pine nuts, toasted - 3 teaspoons olive oil - 1 1/2 teaspoons lemon pepper - 1 pinch salt - 2 tablespoons favorite balsamic vinaigrette dressing or basil vinaigrette Enjoy this as a colorful side or a light entreé.
