Ingredients - 4 sweet potatoes, peeled and cut into 1/2 - 1/2 cup red bell pepper, diced - 1/4 cup green onions, sliced - 1/4 cup fresh flat leaf parsley, chopped - balsamic vinegarette - non-stick cooking spray Colorful salad full of flavor. Dress the potatoes whie still warm to allow them to absorb the vinegarette flavor. Directions
Spray all sides of sliced potatoes with non-stick cooking spray. Grill potatoes over medium heat (350°F - 400°F) 5 to 10 minutes, depending on thickness of potato slices. Turn occasionally.
