Grilled Sweet Potato Salad with Balsamic Vinegarette Recipe

Colorful salad full of flavor. Dress the potatoes whie still warm to allow them to absorb the vinegarette flavor.

Grilled Sweet Potato Salad with Balsamic Vinegarette Recipe (+)

Directions

Spray all sides of sliced potatoes with non-stick cooking spray.
Grill potatoes over medium heat (350°F - 400°F) 5 to 10 minutes, depending on thickness of potato slices. Turn occasionally.
Cool slightly and cut into 1" cubes.
Combine potatoes, pepper, green onions and parsley in a large bowl; toss with vinegarette.
