Grilled Sweet Potato Salad with Balsamic Vinegarette

Ingredients
- 4 sweet potatoes, peeled and cut into 1/2
- 1/2 cup red bell pepper, diced
- 1/4 cup green onions, sliced
- 1/4 cup fresh flat leaf parsley, chopped
- balsamic vinegarette
- non-stick cooking spray 
 
Colorful salad full of flavor. Dress the potatoes whie still warm to allow them to absorb the
vinegarette flavor.
 
Directions

  • Spray all sides of sliced potatoes with non-stick cooking spray.
  • Grill potatoes over medium heat (350°F - 400°F) 5 to 10 minutes, depending on thickness of
    potato slices. Turn occasionally.

  • Cool slightly and cut into 1" cubes.
  • Combine potatoes, pepper, green onions and parsley in a large bowl; toss with vinegarette.
