Ingredients - 3 pounds cooked lobster meat - chopped - 1/2 cup celery - diced fine - 1/2 cup red onion - diced fine - 3/4 cup mayo, light or regular - or to taste - 1/2 cup fresh lemon zest - 1/2 teaspoon Old Bay Seasoning - salt and pepper to taste - 1 tablespoon capers - 4 tablespoons olive oil - 1 baguette - sliced into 1/4 inch slices - parsley for garnish This light salad is great as an appetizer or a light lunch. Directions
Mix lobster meat, celery, onion, mayo, zest, seasonings and capers.
Chill in refrigerator.
Lay baguette slices on a baking sheet and sprinkle with olive oil.
