Ingredients - 1 portobello mushroom - washed, stem removed - 2 slices rye bread - or favorite bread - 4 strips roasted red pepper - 1 tablespoon hummus - 2 slices muenster cheese - 1 tablespoon basil mayo - BASIL MAYO - 1/4 cup mayonnaise - 4 basil leaves - chopped - 1 teaspoon lemon peel - grated Directions
Sauté the mushrooms in a little olive oil in a skillet on medium high heat just until lightly browned on top. (3-5 minutes)
Butter the outside of 2 slices of bread.
On the inside, spread hummus.
