Colcannon Servings: 4 Serving Size: cup

Ingredients - 1 pound potatoes (about 2 large) - 1 pound untrimmed kale - 1 onion - 4 tablespoons butter - 1/2 cup milk, or more if needed - salt Colcannon, a traditional Irish potato dish, can be made with either kale or cabbage. Kale is more colorful; cabbage may be more readily available. Either is very tasty. Colcannon makes a good "encore" use for left-over mashed potatoes. Directions
- Peel potatoes and chop onion. In enough salted water ( 1 teaspoon salt per quart of water)
to cover, boil potatoes until very soft.
Wash kale, remove center stems and cook in boiling water about 5 minutes (use water from the potatoes if you wish). Drain and chop.
Heat butter in skillet and saute onions until soft. Add chopped kale to onions and stir to mix well.
Heat milk. Mash potatoes, adding warm milk as needed to desired consistency. Stir in onions and kale. Taste for seasoning; add salt if needed. Serve warm.
