- 3 medium to large tomatoes, cored and cut in 1/2
- 1 tablespoon jalapeno peppers - finely chopped
- 1 tablespoon fresh cilantro - chopped
- 1 tablespoon lime juice
- 1 teaspoon salt

Directions

  • Heat oven to 400 degrees F.
  • Cut tomatoes in half.

  • Set them cutside down on a foil-lined baking sheet and cook until skin splits and tomatoes
    soften, approximately 10 minutes.

  • Cool slightly on sheet; then peel off the skins and discard.

  • Place tomatoes and remaining ingredients in a food processor and process until well
    blended.

  • Adjust seasoning to taste.

  • Store refrigerated in an air tight container.
