Ingredients - 1 cup fresh raspberries - 1/2 cup cottage cheese - 1 tablespoon sugar, or to taste - 1/2 teaspoon vanilla extract - drop almond extract (optional) - mint or lemon verbena for garnish (optional) Traditional parfaits are loaded with eggs, cream - and calories. Try this light and refreshing version. It can be multiplied to serve any number. Directions
- In a small blender container (see TIP), beat cottage cheese, sugar, vanilla and almond
extract, if using, until creamy. If mixture is too dry to blend well, add a spoonful or two of milk or cream.
To assemble, put a tablespoon of raspberries in each of 2 decorative glasses, small wine glasses, or small glass bowls. Add a layer of the cheese mixture, the rest of the raspberries (with a few reserved for the top), and the rest of the cheese. Top with a raspberry or two, and a sprig of mint if desired.
