Ingredients - hard flatbread, 12 to 14 inch diameter - 3 tablespoons olive oil, divided - 1/2 cup kalamata olives, pitted - 1 1/2 cups mushrooms, sliced - sweet onion, chopped coarsely - 8 ounces mozzarella or swiss cheese, shredded - fresh basil leaves - salt and pepper to taste Crispy, light and delicious, this crackerbread pizza can be served as an appetizer, a snack or a tasty light meal. Directions
- Preheat oven broiler.
- Add 1 tablespoon of oil to a large skillet. Over medium high
heat, saute onions and mushrooms until light and golden brown, appproximately 10 minutes.
Slice olives, remaining mushrooms, onion, and cheese into small pieces.
Place flatbread on baking
