Spinach Rice Salad Prep Time: 20 minutes Cook Time: 10 minutes

Ingredients - 1/2 cup Italian salad dressing - 1 tablespoon soy sauce - 1/2 teaspoon sugar - 2 cups cooked rice - 1 celery stalk, thinly sliced - 1/2 red bell pepper, chopped - 4 green onions, thinly sliced - 2 cups thinly sliced fresh spinach - 5 bacon strips, cooked crisp and crumbled A great summer side dish. Directions
- Cook rice according to package directions.
- In a large bowl, combine the salad dressing,
soy sauce, and sugar. Stir in rice, celery, onions and red pepper. Cover and refrigerate for at least one hour.
Just before serving, stir in spinach and bacon (you may need to add more dressing after refrigerating).
