Spinach Rice Salad

Ingredients
- 1/2 cup Italian salad dressing
- 1 tablespoon soy sauce
- 1/2 teaspoon sugar
- 2 cups cooked rice
- 1 celery stalk, thinly sliced
- 1/2 red bell pepper, chopped
- 4 green onions, thinly sliced
- 2 cups thinly sliced fresh spinach
- 5 bacon strips, cooked crisp and crumbled 
 
A great summer side dish.
 
Directions
  • Cook rice according to package directions.
  • In a large bowl, combine the salad dressing,
    soy sauce, and sugar. Stir in rice, celery, onions and red pepper. Cover and refrigerate for at
    least one hour.
  • Just before serving, stir in spinach and bacon (you may need to add more
    dressing after refrigerating).
