Green Bean Salad with Feta

Ingredients
- 4 cups mixed baby greens
- 1/2 pound fresh green beans
- 2 ounces feta cheese
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon orange juice
- 1/2 teaspoon fennel seed
- salt and pepper to taste
- 1/3 cup dried cranberries (optional)
- 1/4 cup slivered roasted almonds (optional) 
 
Zesty and refreshing ingredients make this a great salad year around.
 
Directions
  • Trim and snap fresh green beans. Cook in salted, boiling water until "al dente" (or just
    slightly crisp).
  • Whisk together oil, vinegar, orange juice, and fennel. Season with salt and
    pepper. Set aside.
  • When beans are finished, drain and allow to cool slightly. Toss beans with

the feta cheese. Mix the beans and cheese with the baby greans.
  • Pour dressing mixture over
    the greens. Top with dried cranberries and/or almonds,  if desired.
  • Refrigerate until
    ready to serve.
