Ingredients - 4 cups mixed baby greens - 1/2 pound fresh green beans - 2 ounces feta cheese - 2 tablespoons olive oil - 1 tablespoon balsamic vinegar - 1 tablespoon orange juice - 1/2 teaspoon fennel seed - salt and pepper to taste - 1/3 cup dried cranberries (optional) - 1/4 cup slivered roasted almonds (optional) Zesty and refreshing ingredients make this a great salad year around. Directions
- Trim and snap fresh green beans. Cook in salted, boiling water until "al dente" (or just
slightly crisp).
Whisk together oil, vinegar, orange juice, and fennel. Season with salt and pepper. Set aside.
When beans are finished, drain and allow to cool slightly. Toss beans with
