Ingredients
- 1 small onion, very finely chopped
- 1/2 cup dry white wine
- 1 clove garlic, minced or pressed
- 1 cup stock or broth
- 1/2 cup crumbled blue cheese, about 2 oz.
- 1 pound ground meat: beef, lamb, turkey, or pork 
 
You can make this delicious creamy sauce while the grill heats. Skip the ketchup and bun--just
enjoy the rich combination of flavors.
 
Directions
  • In a wide pan (to speed reduction), boil onion, garlic, and wine until liquid is almost
    gone. Add stock and boil down to about 1/2 cup. Remove from heat, add cheese, and stir until sauce
    is smooth. Taste for seasoning.
  • Shape meat into 4 patties. Salt very lightly, since the sauce
    is quite salty. Grill or pan-broil the burgers. Serve hot with sauce spooned over.
