Morels in Cream Sauce Prep Time: 10 minutes Cook Time: 15 minutes

Ingredients - 1/2 cup cream - 2 tablespoons finely minced onion - 1 pinch salt, more if needed - 1/2 pound fresh morels - freshly ground black pepper, to taste This rich, but delicate, sauce highlights the woodsy taste of morels. Directions
- Clean morels, if necessary, by cutting them in half lengthwise and brushing or rinsing
any grit or bugs out. Drain. If morels are large, cut into strips.
In a small saucepan or skillet, simmer onions with salt and cream until soft, about 5 minutes. Add morels and continue to simmer, covered, until the morels are tender, about 10 minutes. Add a few grinds of fresh pepper and taste for seasoning.
