- 8 ounces gluten-free pasta
- 1/2 pound green beans, fresh or frozen, cut into 1-2
- 1 red bell pepper, chopped
- 1 small onion, sliced thinly
- 1/2 cup grated cheese (optional)
- 1/2 cup vinaigrette dressing, bottled or homemade
- salt

Directions
  • Cook pasta according to package directions in boiling salted water. Leaving pasta water
    on medium-high heat, scoop cooked pasta out with a slotted spoon or skimmer, and drain well.
  • Add

beans to boiling pasta water and cook until crunchy-tender. Lift out and drain.
  • Add onions
    to boiling pasta water and cook for a minute or two, to mellow the harsh raw-onion taste. Drain
    well.
  • Combine pasta, peppers, beans, onions, and cheese (optional)in a large bowl.

  • Pour
    vinaigrette over all ingredients and mix well. Sprinkle with salt to taste.

  • Serve at room temperature, or chilled.
