Grilled Sweet Potatoes with Lemon-Parsley Butter Prep Time: 10 minutes Cook Time: 20 minutes Servings: 4

Ingredients - 2 large sweet potatoes - 3 tablespoons olive or vegetable oil - 1 tablespoon soy sauce - 1 small lemon - 2 tablespoons butter - 1 tablespoon finely chopped parsley The natural sweetness of the potatoes contrasts nicely with tangy lemon. Add this to your grilling repertoire! Directions
- Preheat gas grill or light charcoal.
- Peel potatoes and slice, as uniformly as possible,
into rounds about 1/2 inch thick. Mix oil and soy sauce; brush or rub all over potato slices.
Put slices in a grilling basket to make turning easier. If cooking directly on the grill, make sure grate is very well oiled. Cook over medium-low heat, to prevent burning, until soft--about 7 - 10 minutes per side. Turn occasionally.
