Ingredients
- 2 cups cooked beets
- 1/4 cup vinaigrette, purchased or homemade
- 1 tablespoon crumbled feta cheese
- 1 tablespoon coarsely chopped walnuts 
 
Use canned beets for quickest version of this dish; use roasted beets for best flavor.
 
Directions

 

  • Slice or dice beets.Toss with vinagrette sauce to coat well. Let stand--at
    least 10 minutes, or as long as overnight--refrigerated, to develop flavor. Sprinkle on the cheese
    and nuts just before serving.
