Duck on Mixed Greens

Ingredients
- 4 duck breast halves (4 ounces each), skinned and boned
- 1/4 cup sweet red pepper, diced
- 1/4 cup sweet yellow pepper, diced
- 1/2 cup grape tomatoes
- 1/2 cup croutons
- red wine vinaigrette
- salt and pepper to taste 
 
Roast duck breast makes this attractive salad a special treat for an elegant dinner party or luncheon.
 
Directions
  • Preheat oven to 450ยบ F.
  • Coat a large skillet with vegetable cooking spray. Place duck
    breasts into prepared skillet and brown lightly, approximately 1 to 3 minutes on each side.
  • Coat a baking dish with vegetable cooking spray, put the duck in baking dish, and
    bake for 20 minutes, or until done.
  • Allow duck to cool before slicing thinly. Divide spring
    greens between 2 serving plates. Sprinkle greens with vegetables, the sliced duck, and
    croutons. Drizzle with dressing. Season to taste.
  • Serve immediately.
