Ingredients
- 1 large or several small leaves of any kind of greens
- 3/4 cup cottage cheese
- 1 cup cut up assorted fruits and/or vegetables
- 1 pinch paprika and/or turmeric (optional)
- edible flowers or fresh herbs for garnish (optional) 
 
Quick, easy, nutritious and adaptable, this is the perfect dish for a light lunch on those summer
days when it's too hot to cook.
 
Directions
  • Arrange greens on a plate (chilled, if you wish): 1 large or several small leaves
    ( lettuce, spinach, kale, chard, etc).  Put cottage cheese on the greens.
  • Scatter your
    choice of fresh fruit and/or vegetables around the mound of cheese in an attractive arrangement.
  • Sprinkle paprika and/or turmeric, if using, over the cottage cheese. Garnish with edible
    flowers or fresh herbs, if you wish.  Good served with a slice of crusty bread, crisp crackers,
    or a chunk of corn bread.
