Lobster Mushroom Salad Prep Time: 15 minutes Servings: 4

Ingredients - 4 vine ripened or Roma tomatoes, seeded and finely chopped - 2 tablespoons fresh parsley, chopped - 1 tablespoon fresh basil, chopped - 2 teaspoons minced garlic - 1/4 cup fresh lemon juice - 3/4 cup canola oil - salt and pepper to taste - 5 to 6 lobster mushrooms (or similar firm mushrooms), cut into bite sized pieces - 5 ounces spring greens - 2 ounces arugula or mizuna - 16 ounces imitation crab A fresh green salad with earthy mushrooms and bites of "crab." Directions
- Combine tomatoes, parsley, basil and minced garlic in a large bowl.
- In a small bowl,
whisk together fresh lemon and oil and pour over tomato mixture. Salt and pepper to taste. Cover and chill for 30 minutes.
Place greens in a salad bowl. Layer imitation crab meat and lobster
